Ayurvedic Tips and Reminders- What should I make for dinner?

Dear friends,

lentil burger: Vegetarian lentil burger in wholewheat bun with lettuce, tomato and cucumber (Selective Focus, Focus on the front of the sandwich)

By this time of year especially with the weather so unpredictable lately, you may be asking yourself.. what do I feel like eating or what should I make for dinner?

We’ve all had our share of winter stews, butternut squash, turkey and roasted everything. Right?

In just thirty minutes you could make a protein-rich dinner, easy to digest, heart healthy, fiber-rich, a blood sugar sustainer, good source of iron, energy booster, weight loss advocate food AND a food high in magnesium which statistic show 80% of the population is deficient in. … what is it ?- lentil burgerstop with a gluten free bun and an aoli sauce lettuce and tomato and the fun begins. What’s the best food in Ayurveda? Hope you said, ” one that is easy to digest”!

here’s the recipe:

One cup brown lentils- First cook in two and half cups water or veggie stock with pink salt. You can soak the lentils ahead of time for one hour in water.

While that’s cooking saute, half onion ,  1/2 tsp cumin, 1/2 tsp turmeric, a few cloves garlic,  one carrot, hand ful of peas and corn ( frozen) in olive oil- cover and add a little veggie stock so veggies can cook- steam for about five minutes. Be creative with the veggies- could add mushrooms and spinach.

When veggies are cool, combine with lentils adding 3/4 cup gluten free bread crumbs and 3/4 cup gluten free oats ( pulsed in food processor). Combine all ingredients and add braggs liquid aminos- ( I like the spray). Make patties. Bake in 350 oven or saute for two minutes on the stove. You can serve with a side spinach salad, red onion and no oil dressing- anything goes- treat it like a hamburger. These also make great snacks for work, on the go, or for lunch the next day. Cant’ wait for dinner.IMG_0286

In Ayurveda, lentils are good for all energy types with varieties such as green mung lentils, split yellow lentils, and red lentils. They are all great foods for this transitional weather. Bon appetit.

Reminder; if you care to lose a few pounds of winter weight one thing you can do according to Ayurveda is eat your largest meal at lunch- dinner by 6pm . Losing weight has many other related issues- digestion, absorption, cortisol levels, sleep, stress etc. But a light dinner meal is a good start. Just takes a little getting used to for the husbands! But for kids always give plenty of healthy food.
