Good Nutrition Can be Easy!- Use Your Crock Pot
I left home today to do some errands and came back five hours later to a great lunch- Lentil Soup
Here’s the recipe:
1- 3/4 green or brown lentils- rinsed
8 cups vegetable stock/chicken or both
one onion chopped- 5 garlic cloves chopped
2 cups celery chopped
2 cups carrots chopped
1-2 cups tri colored potatoes or butternut squash
1 tsp each of cumin, coriander, cinnamon, smoked paprika ( if you like heat), turmeric
Chopped fresh ginger or powder
1 tsp pink salt and pepper
Cook on high heat for five hours or low 8-9 hours- tops with fresh spinach, lemon or lime and a little ghee or sliced avocado. Enjoy!. |
